Tasting note: Deep purple color, luminous ruby red. Elegant aromas of black cherries, blackberries, plums, damsons, carob, and figs, with delicate floral notes (rose) and a herbaceous taste of thyme, wild mint, and cinchona bark; complemented by licorice and almond. Lush, velvety, soft, and sweet on the palate. It combines elegant tannins and a pleasant acid structure. Long and intense finish.
Culinary recommendation / goes well with: It pairs excellently with cheese and dessert. Harmonious with a mild cheese or with chocolate.
Cultivation method: 60-year-old vines; 7,000 vines per hectare.
Production technique: Manual harvesting of the grapes into crates. Maceration (fermentation of the skin with the juice) for 4 weeks. The fermentation is stopped naturally. The wine is aged for at least 18-24 months in stainless steel tanks, followed by several months of bottle aging.
Soil: Medium texture, calcareous clay soil.
