This unique Sardinian coppa (pork neck) comes from the Oliena region in the Sardinian interior. Andrea Demauro raises these small, black-and-white pigs with great passion and affection for the animals, who live outdoors in the wild all day. They are served with leftover beer from a small brewery. These are truly happy pigs. The wonderfully tender and flavorful meat is clearly reflected in the salami.
