Taste & Use
Tasting note: Dense ruby red with chestnut-brown highlights. Delicate aromas of damson, cherry, and ripe plum, accompanied by notes of thyme, tobacco, and liquorice. It has a full and balanced taste, warm but tempered by velvety tannins and juicy freshness. Long and pleasant finish.
Culinary recommendation / pairs well with: It pairs excellently with pasta dishes like Apulian orecchiette, pizza, grilled dishes, roasts, as well as rabbit, game, and lamb. Harmonious with an aged pecorino.
Cultivation method: Old vines and grapevines, cordon-trained; 4000 vines per hectare.
Production technique: Manual harvesting of the grapes into crates. Maceration (skin contact with the juice) for 10-12 days. The wine is aged for at least 12 months in stainless steel tanks, followed by bottle aging for at least 6 months.
Soil: Very deep medium texture, calcareous clay soil
