This unique Sardinian dry-cured ham comes from the Oliena region in the Sardinian interior. Andrea Demauro raises small, black and white pigs with great passion and affection for the animals, which spend their entire days out in the wild. They are fed with leftover beer from a small local brewery. These are truly happy pigs. The wonderfully tender and flavorful meat is clearly reflected in the salami.

Use: As a side for meals (sandwiches), with focaccia, bread, or for an apéro, or as an accompaniment to a glass of wine or beer.
