The walnuts for this liqueur are harvested around the summer solstice. Combined with Grappa from Ticino and the work of a dedicated entrepreneur from the Basel region, the NOOS liqueur is finally created.

In 2016, Yves Branchi went independent with his own liqueur factory near Basel. The Ticino native named his very first release NOOS, which is derived from the Ticino word for "nut." Yves did not reinvent the wheel, however; he brought his mother's recipe to life—a recipe he simply couldn't let go of. The walnuts, which he later blends with spices, sugar, and Grappa, are not simply bought; Yves has them picked by hand at a nearby farm. The harvest takes place only at night around the summer solstice and is carried out by barefoot women from his circle of friends. This special procedure is based on an ancient legend from pagan times. At that point, the walnuts are indeed still unripe, but packed with essential oils because the Northern Hemisphere receives the most sunlight at the end of June. The nuts are then steeped with the spices and sugar in Grappa, which, like Yves himself, comes from Ticino. You wait for 40 nights before bottling the Nocino (walnut liqueur) during a particularly busy night shift. In 2019, Yves produced 800 liters of NOOS annually in this manner.
